Doodhi Na Muthia By Bhanumati  



Main Ingredients
Doodhi, Gram flour, chappatti flour, Maize meal

Ingredients Method
1 cup cooked rice 
1 1/2 cup gram flour 
1/2 cup chappatti flour 
1/4 cup maize meal 
1 cup grated doodhi
   (or courgette as an alternative) 
2 tbsp oil 

For seasoning:
1 bunch fresh fenugreek leaves 
1 tbsp grated ginger  
1 tsp garlic 
1 tsp sugar 
2 tsp salt 
1 tbsp crushed fresh green chilli (or to taste) 
1 tbsp lemon juice 
1/4 tsp turmeric  
2 tsp sesame seeds 
2 tsp mustard seeds 
1 tsp ajmo  


  1. Sieve all the flours in a large bowl .

  2. Add the rest of the ingedients.

  3. Mix using the water from the vegetable to bind the mixture.

  4. If necessary, add a little water.

  5. Take a fistful of dough and create a roll shape

  6. Repeat and place the roll shapes in a boiling steamer

  7. Steam for 20 minutes

Serving:

  1. When cooled, slice into circles.

  2. Temper the slices in hot oil with mustard seeds and sesame seeds.

Makes: Serves 2 - 4
