1 cup cooked rice
1 1/2 cup gram flour
1/2 cup chappatti flour
1/4 cup maize meal
1 cup grated doodhi (or courgette as an alternative)
2 tbsp oil
For seasoning:
1 bunch fresh fenugreek leaves
1 tbsp grated ginger
1 tsp garlic
1 tsp sugar
2 tsp salt
1 tbsp crushed fresh green chilli (or to taste)
1 tbsp lemon juice
1/4 tsp turmeric
2 tsp sesame seeds
2 tsp mustard seeds
1 tsp ajmo

Sieve all the flours in a large bowl .
Add the rest of the ingedients.
Mix using the water from the vegetable to bind the mixture.
If necessary, add a little water.
Take a fistful of dough and create a roll shape
Repeat and place the roll shapes in a boiling steamer
Steam for 20 minutes
Serving:
When cooled, slice into circles.
Temper the slices in hot oil with mustard seeds and sesame seeds.
